Okey-Dokey, Artichokey!

When we are doing a Three-Dips & Chips night at TRHQ, everyone expects to see Artichoke Dip on the list.  Our family loves it!

Best part- it only takes about half an hour from start to finish!

Ingredients:

1 Small Jar of Artichokes- You are going to dice them up, so you don’t need to pay extra to get whole hearts.

1 small Onion (optional)

Olive Oil

Salt & Pepper

1 t Oregano

8 oz. Cream Cheese

4 Oz. Parmesan or Romano Cheese

You can use toasted bread, chips, good crackers, tortilla chips, or fresh veggies for dipping.

Tip1: Substitute parmesan with almost any cheese.  Different cheeses will give you a different flavor- but the end result will still be delicious!

Process:

Saute onions in oil until soft.  Keep’em cooking if you like a little carmelization!

While onions are cooking, rough chop the artichoke hearts.  Add them to the onions when onions are cooked.

Add Salt, Pepper and oregano.

Grate the Parmesan cheese to get it ready.

Cube up cream cheese and add to sauté pan.  Mix it through with the onion/artichokes.  Keep stirring, so it won’t stick too much to the pan.  (It could burn if you leave it for too long!)

When the cream cheese is combined, mix in the parmesan cheese.

Remove from heat, and get ready to eat!

Simple and delicious- just the way we like it!

Tip2: Add some spinach to the dip, along with the artichokes, to make Spinach Artichoke Dip!
