  1. Quiche Me!

    You will be pleasantly surprised at how easy it is to put together a homemade quiche.  We’d like to share with you our favorite recipe that is a tried and true family favorite- Cheesy Veggie Sausage-Mushroom Quiche.

    Ingredients for the filling:

    Six eggs

    ½ box of veggie sausage (we use Boca or Morningstar Farms)

    8 oz. Fresh Mushrooms

    1 cup of milk

    2 cups of shredded cheddar cheese

    Oregano or Parsley to sprinkle on top

    Ingredients for the crust:

    1 cup flour

    1/2 teaspoon salt

    1/3 cup butter

    ¼  cup water

    Your entire family can contribute to the creation of this wholesome meal.  While our veggie sausage is defrosting on the counter, we slice and saute the mushrooms in a little butter or oil.  Add some salt, black pepper and oregano to get a really delicious mix going.   While that is cooking up, we start mixing the ingredients for our crust.  The kids measure the flour and salt and help with the stirring.  The kiddoes really like mixing the butter in, which we do with clean hands instead of a dough cutter.  Add in the water a little at a time, until the dough comes together.  (You might not need all the water.)  While your dough chills in the fridge for a few minutes, slice and add your sausage right into the sauteing mushrooms.

    Then it is time to lay out our dough and roll it.  Since there is no top to the quiche, you don’t have to worry too much about getting the dough to look perfect- that’s part of what makes this a great dish to cook up with the kids- little imperfections will get covered up in the baking step.

    Finally, we place the crust into the pan and set it aside.  It’s time to preheat your oven to 350 degrees.

    Now for the filling!  Get your kids to shred the cheese (we recommend this kid friendly grater  http://www.ikea.com/us/en/catalog/products/50153180/.) Next, whisk up the eggs and milk.  Put about half your cheese on the bottom of the crust, then add the sauteed filling, then the rest of the cheese.  Pour the egg and milk mixture over the top and watch it seep into all the crevices.  Sprinkle a bit of oregano or parsley on top for a touch of color, and then into the oven it goes.

    Bake at 350 degrees for 40 minutes, allow to cool for 30 minutes, and viola!  Throw a nice veggie on the side and you’ve just made a completely delicious and nutritious meal for your entire family.  Your quiche will store in your fridge for up to four days or in your freeze for up to 2 ½ months  (check out this nifty site for food storing safety:  http://www.stilltasty.com/)
